Unicorn Snow Cones

Ingredients

  • Strawberry Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 1 pint strawberries stems removed, sliced
  • Red food coloring

  • Pineapple Simple Syrup:

  • 3/4 cup sugar
  • 1 cup water
  • 1 cup crushed pineapple juice included
  • Yellow food coloring

  • 1 cup sugar
  • 1 cup water
  • Blue food coloring
  • 1 teaspoon all natural blue berry extract we used Pure Blueberry Extract by OliveNation*

  • *You can use fresh blueberries to make this simple syrup but the resulting color will be purple instead of blue! If you are looking for a true bright blue color for your sno cone syrup the extract and food coloring combo is the way to go!

Instructions

  • For the strawberry simple syrup: Combine sugar and water in a small sauce pan. Bring to a boil and cook just till sugar is completely dissolved. Remove from heat. Add in the strawberries. Let sit at least 30 minutes, up to 8 hours. Strain through a fine mesh sieve. Stir in a few drops of red food coloring to give a more vibrant color. Let cool completely and store in refrigerator.
  • For the pineapple simple syrup: Combine sugar and water in a small sauce pan. Bring to a boil and cook just till sugar is completely dissolved. Remove from heat. Add in the crushed pineapple. Let sit at least 30 minutes, up to 8 hours. Strain through a fine mesh sieve. Stir in a few drops of yellow food coloring to give a more vibrant color. Let cool completely and store in refrigerator.
  • Combine sugar and water in a small sauce pan. Bring to a boil and cook just till sugar is completely dissolved. Remove from heat. Stir in blueberry extract and a few drops of blue food coloring. Let cool completely and store in refrigerator.
