Cook Time20 minutes
Servings: 12 Cupcakes

Ingredients

For the Red Velvet Cupcakes

  • 1 1/3 cups all-purpose flour
  • 3 Tbsp cocoa powder
  • 1/2 tsp baking soda
  • 3/4 cup butter (room temperature)
  • 1 cup Truvia® Sweet Complete
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk or milk alternative
  • 1 tsp distilled white vinegar
  • Red food coloring

For the Cream Cheese Frosting

  • 1/2 cup unsalted butter (room temperature)
  • 8 oz cream cheese (cold)
  • 1/2 tsp vanilla extract
  • 3 cups Truvia® Confectioners Sweetener

Instructions

Red Velvet Cupcakes

  • Preheat your oven to 350 degrees F.
  • In a medium bowl, whisk together flour, baking soda and cocoa powder.
  • In a large bowl, beat the butter and Truvia® Sweet Complete until fluffy, about 2-3 minutes.
  • Beat in the eggs, one at a time, until combined.
  • Beat in vanilla extract.
  • In a separate bowl, whisk together the milk and vinegar.
  • Beat in the flour mixture in a few additions, alternating with the milk mixture, until just combined.
  • Add food coloring as desired and beat to achieve red color. The amount will vary based on your food coloring!
  • Fill prepared muffin tins, each about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow cupcakes to cool before frosting.

Cream Cheese Frosting

  • Using an electric or hand mixer, beat the butter and cream cheese until fluffy.
  • Beat in the vanilla.
  • With the mixer on low, slowly add the Truvia® Confectioners into the mixture. Beat until smooth.
  • Remove 1/4 of the frosting from the mixer and set aside. Then, add red dye to the reamining frosting as desired and beat until incorporated.

Assembling the Santa Hat Cupcakes

  • Spoon the red frosting into a piping bag fitted with a star tip (or other tip as desired).
  • Start in the center of your cupcake and pipe the red frosting in a spiral motion, gradually narrowing the spiral as you move upward and end with a peak.
  • Spoon the white frosting into a piping bag fitted with a star tip (or other tip as desired).
  • Pipe dots around the red frosting swirl, and one on top to finish the hat!
