Red Velvet Cupcakes
Preheat your oven to 350 degrees F.
In a medium bowl, whisk together flour, baking soda and cocoa powder.
In a large bowl, beat the butter and Truvia® Sweet Complete until fluffy, about 2-3 minutes.
Beat in the eggs, one at a time, until combined.
Beat in vanilla extract.
In a separate bowl, whisk together the milk and vinegar.
Beat in the flour mixture in a few additions, alternating with the milk mixture, until just combined.
Add food coloring as desired and beat to achieve red color. The amount will vary based on your food coloring!
Fill prepared muffin tins, each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow cupcakes to cool before frosting.
Cream Cheese Frosting
Using an electric or hand mixer, beat the butter and cream cheese until fluffy.
Beat in the vanilla.
With the mixer on low, slowly add the Truvia® Confectioners into the mixture. Beat until smooth.
Remove 1/4 of the frosting from the mixer and set aside. Then, add red dye to the reamining frosting as desired and beat until incorporated.
Assembling the Santa Hat Cupcakes
Spoon the red frosting into a piping bag fitted with a star tip (or other tip as desired).
Start in the center of your cupcake and pipe the red frosting in a spiral motion, gradually narrowing the spiral as you move upward and end with a peak.
Spoon the white frosting into a piping bag fitted with a star tip (or other tip as desired).
Pipe dots around the red frosting swirl, and one on top to finish the hat!
