Easy Coffee Bundt Cake

This easy coffee bundt cake is made with cake mix, pudding and sour cream with a cinnamon swirl throughout! Quick to make, so moist and delicious!

Ingredients

For the cake:

  • 1 box yellow cake mix
  • 1 box instant vanilla pudding small box, 3.4oz
  • 4 large eggs
  • 1/2 cup canola oil
  • 8 oz sour cream
  • 1 tsp vanilla extract

For the filling:

  • ¼ cup brown sugar
  • ¾ cup granulated sugar
  • 1 Tbsp cinnamon
  • 1 Tbsp butter, melted
  • Powdered sugar for dusting

Instructions

  • Grease and flour a bundt pan and pre-heat oven to 350 degrees.
  • Beat cake mix, pudding mix, eggs, oil, vanilla and sour cream together in a large bowl at high speed until thick and creamy, about seven minutes.
  • Meanwhile, make the filling. Stir brown sugar, granulated sugar, cinnamon and butter with a fork.
  • Pour 3/4 of the cake batter into your greased bundt pan.
  • Sprinkle filling mixture over cake batter.
  • Top with remaining batter.
  • Bake 50-55 minutes, or until a toothpick inserted comes out clean.
  • Let cool for 15 minutes and remove from pan.
  • Once completely cool, dust with powdered sugar.

Notes

Note:
You can make this coffee cake the night before you plan on serving. Wait to dust with powdered sugar until just before serving!
