Whenever Jeff goes out of town, I send him on his way with some baked goods to snack on. It’s almost always chocolate chip cookies since that is all he ever asks for. So when he was on a work trip last week, I baked up a batch and accidentally made a few (ok, a dozen.) too many so they just had to stay back home with me. Too stinkin’ bad, huh? I was busy shooting one of my Cricut projects and needed some fuel, by way of sugar, so I grabbed the cookie jar and brought it over. And then… this happened? I’m not sure how. But in the middle of eating a cookie, I was suddenly also stacking them into this cute little birthday “cake.” I know Jeff isn’t the only one that goes BANANAS for chocolate chip cookies, so this seemed like the perfect quicky-birthday dessert option for those who aren’t cake fans, or those who just plain LOVE cookies. Stack ’em, douse it in sprinkles and pop some candles in the top. DONE!

Have you ever made an alternative birthday “cake”? I’ve been dying to make a stacked donut cake, too. Though, I am pretty partial to a good old fashion real birthday cake. Fittingly, it’s Chelsea’s birthday today! Happy Birthday, Chels! I would say this is for her, except for I ate all of the cookies last week… Whoops!
