Chocolate Cookie Waffle Pops

I have never met a dessert-meets-breakfast combo I didn’t like. So who’s up for a new one??? We got to partner up with International Delight and the newest collab they just launched… International Delight OREO® cookie flavored creamer and WOWOWOW it’s good. Even before you taste it, the smell takes you right back to the days of OREO® dunking… and now you can just pour it right into your coffee!
We decided to also whip up these chocolate cookie WAFFLE POPS (!) flavored with the creamer itself! They’re soooo good, and crazy easy to make. It would be so fun for a party, you could let guests decorate ’em up themselves. Or you know… just an average Tuesday. Here’s the how-to!

We used the flavored creamer in both the waffle and the icing and it truly gave these the perfect OREO® flavor.

Chocolate Cookie Waffle Pops

Yield: 15-20 waffles
 
Ingredients
  • 1 cup flour
  • ¼ cup cocoa powder
  • ¼ cup brown sugar, packed
  • 1 teaspoonful baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs, separated
  • 1 cup International Delights Oreo creamer
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 ounces milk or semi sweet chocolate, roughly chopped
  • Nonstick spray
  • Large popsicle sticks
  • 2 cups powdered sugar
  • 3 tablespoons International Delights Oreo Creamer
  • 3 tablespoons International Delights French Vanilla creamer (for white icing)
  • 1 teaspoon vanilla extract
Directions
  1. Whisk together the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  2. Combine the egg yolks, International Delights Oreo creamer, vegetable oil and vanilla extract.
  3. Add wet ingredients into dry and mix till combined.
  4. Using an electric mixer, beat egg whites till medium peaks form. Gently fold the egg whites into the batter.
  5. Add in the chopped chocolate and gently fold in till combined.
  6. Heat waffle iron on high. Spray with nonstick spray. Place about ¼ cup of batter in an oval shape onto each quarter of your waffle machine. Place a large popsicle stick onto the waffle and cover the stick with a little more batter. Close the waffle maker and cook for 2-3 minutes. Transfer to a wire cooling rack.
  7. To make the icing, combine creamer, powdered sugar, and vanilla extract and whisk with an electric mixer till smooth.
  8. Drizzle icing over waffles and top with sprinkles or toppings for your choice.
