This coffee bundt cake is the smell I associate most with Christmas morning! My mom made this coffee cake with yellow cake mix every year for Christmas, and it’s a holiday tradition I have continued with my family! Using cake mix, pudding and sour cream, it’s quick and easy to put together plus it has an incredibly delicious cinnamon swirl running through it!
Topped with powdered sugar, it looks beautiful on a breakfast buffet for everyone to grab on their way in to see what Santa left under the tree!
Ingredients You’ll Need
Here’s what you’ll need to make this bundt cake:
- 1 box yellow cake mix (ensure the mix does NOT have pudding in it!)
- 1 small box instant vanilla pudding mix
- 4 eggs
- 1/2 c canola oil
- 1 teaspoon vanilla
- 8 oz sour cream
- 1/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 Tablespoon cinnamon
- 1 Tablespoon butter, melted
- Powdered sugar (for dusting!)

Step-by-step Instructions for Making A Coffee Bundt Cake
Follow these steps to quickly pull together this delicious coffee cake with yellow cake mix!
- Grease a bundt pan and pre-heat oven to 350 degrees.
- Beat cake mix, pudding mix, eggs, oil, vanilla and sour cream together in a large bowl at high speed until thick and creamy, about seven minutes.
- Meanwhile, make the filling. Stir brown sugar, granulated sugar, cinnamon and butter with a fork.
- Pour 3/4 of the cake batter into your greased bundt pan.
- Sprinkle filling mixture over cake batter.
- Top with remaining batter.
- Bake 50-55 minutes, or until a toothpick inserted comes out clean.
- Let cool for 15 minutes and remove from pan.
- Once cool, dust with powdered sugar.
Can I make this coffee bundt cake ahead of time?
Yes, we often make it the night before so we don’t have to worry about baking and cooling it Christmas morning! I recommend waiting until the morning you’re serving it to dust with powdered sugar, however.

I always make mine in a bundt, my mom usually makes hers in an angel food cake pan. I’ve never tried it in a regular cake pan so I can’t speak to that unfortunately!!
